Turkish Ezogelin Lentil Soup Recipe

One of the interesting things about traditional Turkey dishes is that most of them have specific names and stories like people. When I  started to travel abroad, I was very confused about restaurant menus. Reading dishes like "Chicken with brown rice" had confused me, I was like, but what is the name of the dish?

This very famous, traditional and tasty red lentil soup's name Ezogelin. "Ezo" is the name of the girl and "gelin" means bride. Ezobride soup:) Ezogelin soup was created by Ezo.

Ezo was a very beautiful girl from Gaziantep and there are lots of stories about her, her beauty, her marriage, her exile to Syria and how she ended up creating dish dish with simple and humble  ingredients after she was tired of the bland food she was eating when she was sick.

Yes you can make lentil soup very bland or make it this way, amazing..

Turkish Ezogelin Red Lentil Soup Ingredients

YIELD: Makes 4-6 servings

  • 2 tbsp olive oil 

  • 1 onion, chopped

  • 2 garlic cloves, finely chopped

  • 1/4 cup diced tomato, canned (optional)

  • 2 tbsp tomato paste

  • 1 cup red lentils, washed and drained

  • 1/4 cup fine grain bulgur, washed and drained

  • 1/4 cup rice, washed and drained

  • 4 or 5 cups chicken stock or water

  • 1 tsp paprika

  • 1/2 tsp dried chili or red crush pepper (optional)

  • 1 tbsp dry mint

  • Salt

  • Pepper

Mint Butter Sauce:

  • 2 tbsp butter

  • 1 tsp dry mint

Turkish Ezogelin Red Lentil Soup Recipe Preperation

1)Saute onions with the oil for 2 minutes until onions change color​ in a medium size soup pot.

2)Add finely chopped garlic until its smell comes out.

3)If you are using add tomatoes and cook it about 10 minutes until they get soft. 

4)Add all other ingredients and stir well

5)Increase the heat until mix boils and then lower the heat and simmer the soup mixture until lentil and rice cooked, about 30 minutes.

6)You can serve this soup as it is or you can puree everything with hand blender.

7)Before serving the soup, melt the butter in a saute pan. When you see bubbles in the butter, turn off th heat and add 1 tsp mint and mix.

 

8)Plate the soup and add this mixture to the soup

9)Serve with lemon wedges
